1 | onion, finely sliced | ||

3 | cups | tomato, chopped | |

4 | cloves | garlic, sliced | |

1 1/2 | inch | piece of fresh ginger, peeled and chopped | |

1 1/4 | cups | brown sugar | |
|
|||
1 | cup | red wine vinegar | |
|
|||
5 | cardamom seeds | ||
|
|||
1/2 | teaspoon | paprika | |
|
Place all of the ingredients into a large pot and bring to a gentle simmer. Simmer for 45 minutes to 1 hour, stirring frequently.
When ready, bring ingredients to a gentle boil, and boil until the mixture turns dark, jam-like and shiny. Remove from heat and let cool.
